The Ben-Tiki Sour was created on the spot by mixologist Ben Sandrof at the request of spirits author Frederic Yarm, who asked for something like a Pisco Sour. Vigorously shake all ingredients (except the sparkling water and bitters) with ice. Strain into a narrow, tall glass (no ice). Carefully pour soda water in until the foam reaches the top of the glass. Twist a grapefruit peel (or any other citrus) over the foam, and dot the foam with 3 drops of the tiki bitters.
