Strawberry Contessa

We don’t need any help getting through a bottle of Lillet Blanc (our favorite white wine apéritif), but we had just made some incredible strawberry syrup and then we found this recipe from Las Vegas’ Rx Boiler Room in Imbibe magazine – how could we refuse Fate?
The Strawberry Contessa is a wonderful way to showcase your own homemade strawberry syrup. It has such a fresh, beautiful flavor, like a strawberry just barely on the edge of overripeness. Make sure your white tonic apéritif is fresh; after opening, it only lasts for a week, maybe two, in the fridge.

Ingredients
- 1 part Gin
- 1 part White wine apéritif
- 1 part Strawberry syrup
- 1 part Lemon juice
- 2 parts Sparkling water
Instructions
Shake everything (except the sparkling water) with ice, and strain into a short ice-filled glass. Top with sparkling water, and garnish with a sprig of mint or a slice of strawberry.
