Summer of George

Master mixologist Jeremy Oertel is the brains behind the Summer of George, a brilliant tequila + pear cocktail that we just can’t stop sipping. It’s sweet and tart, and well-rounded thanks the two types of tequilas.

Oertel calls for St. George’s spiced pear liqueur, which includes cinnamon and clove flavors. It will still be quite tasty with a simpler variety of pear liqueur, but the spices are just beautiful alongside the honey and orgeat.

Oertel also calls for honey instead of honey syrup. Straight honey tends to solidify on contact with ice, making it nigh-impossible to mix properly into the drink. To combat this, add all the ingredients to the shaker first before the ice, stir it to dilute the honey, and then add the ice and shake as usual. If you have honey syrup, you can use that instead – just remember to double the amount listed, to reflect the extra water content.
