Barrymore Room

Brad Farran’s Barrymore Room is a twist on the Clover Club’s namesake cocktail, rejiggered with a bourbon base instead of gin and strawberry in place of raspberry.
It’s a real winner: refreshing, juicy, fluffy, and eminently sippable. Muddled strawberry and egg white (or aquafaba) create a ridiculously smooth, velvety texture, while lime juice and bourbon (Farran recommends Elijah Craig 12 Year) cut through the sweetness and keep the drink grounded.
Having trouble measuring out such a small portion of egg white? Try beating it a little first, before you pour it into your jigger or measuring cup.

Ingredients
- 1 whole Strawberry
- ½ part Simple syrup
- 1½ parts Bourbon
- ½ part Sweet vermouth
- ½ part Lime juice
- ¼ part Egg white or Aquafaba
Instructions
Muddle the strawberry with simple syrup in a shaker. Add the remaining ingredients and shake without ice. Add ice and shake again (this technique is called a “dry shake”). Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass.
