Clover Club

When this drink was invented in the late nineteenth century, the recipe called for raspberry syrup. Over time, the ingredient fell out of favor and was replaced by grenadine. We think it’s best with raspberry syrup, or a raspberry liqueur, but if you must use grenadine, at least use a real one and not a red-dyed corn syrup substitute.

Ingredients
- 2 part Gin
- 1 part Lemon juice
- 1 part Egg white or Aquafaba
- ½ parts Raspberry syrup or Grenadine or Raspberry liqueur
Instructions
Shake vigorously with ice and double-strain into a chilled cocktail or coupé glass.
