This is where we learned about the “dry shake” technique for egg-white cocktails – shake first without ice, and then again with ice, to get a wonderfully velvety texture.

Add all ingredients to a shaker and shake without ice. Add ice and shake again. Double-strain into a chilled, beautiful small glass.
