Bitter Apparition

The Bitter Apparition is a gin sour with the volume cranked up to 11, thanks to just a wee teaspoon of allspice liqueur and a spicy bouquet of bitters. It’s the creation of Jacob Rakovan and Luc Thiers at The Spirit Room in Rochester, New York.

At The Sprit Room, the drink is served with the walnut bitters sprayed atop the egg foam through a stencil in the shape of a mystical eye, with a dot of red Creole or aromatic bitters for the pupil. Decorate your foam however you like!

Dry-shake all ingredients (except the bitters) first without ice, then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass. Garnish with the bitters, sprayed or dotted on the foam in any pattern you like.
