Oi Boy

Kara Newman, author of Road Soda (a book about making cocktails while traveling), took note of the variety of fun soju cocktails in New York’s East Village and tried her hand at recreating them. One of her successes was this refreshing cocktail described as a Cucumber-Ginger Soju Sipper, which we’ve rechristened as Oi Boy in honor of the Korean word for cucumber.

Ingredients
- 3 slices Cucumber
- 2 parts Soju
- ¾ part Ginger liqueur
- ¾ part Lemon juice
Instructions
Muddle cucumber slices in a shaker. Add ice and the remaining ingredients and shake well. Double-strain through a fine mesh strainer into a chilled cocktail glass (or a cute reusable drink pouch, like Newman does), and garnish with a fresh cucumber slice.
