Rising Sun

The Rising Sun is a deliciously tart, smoky mezcal cocktail from Toro Bravo, a restaurant in Portland, Oregon. Mezcal cocktails can sometimes be too intensely smoky, but the Rising Sun’s combo of bright citrus and nutty, sweet maraschino tames the smoke.
Toro Bravo uses Maraska maraschino, instead of the more-common Luxardo brand. This was a good call; Maraska lacks the super-funky undertones of Luxardo, and its almond-forward flavor pairs well with agave and grapefruit.

Ingredients
- 1½ part Mezcal
- ½ part Maraschino
- ¾ part Grapefruit juice
- ½ part Lime juice
- 1 pinch Salt
Instructions
Shake all ingredients with ice. Strain into a chilled cocktail glass and garnish with a lime wheel.
