Scorpion Kick

The Scorpion Kick is a brilliant Daiquiri riff from Dan Greenbaum at Diamond Reef, a bar & grill in New York City. Its rum-citrus-chocolate combo shows up in a few similar drinks, and we never get tired of it.
Here, it’s bolstered by a big fistful of mint leaves, giving it a quality not unlike one of those melt-in-your-mouth after-dinner mints.
Greenbaum recommends Plantation 3 Star, one of our go-to white rums (along with El Dorado 3-Year).

Ingredients
- 2 parts Light rum
- ½ part Crème de cacao
- 1 part Lime juice
- ¼ part Simple syrup
- 10 leaves Mint
Instructions
Shake all ingredients with ice. Strain into a chilled cocktail or coupe glass.
