Scorpion

We confess that we only knew of this drink as one of those awful eight-person bowls of hooch served at knockoff tiki-esque chain restaurants. It wasn’t until we saw this pared-down single-serving recipe from Gaz Regan that we learned how tasty and balanced this cocktail can be. Gaz suggests trying it with Pisco brandy, which is delicious.
The overproof rum can be floated on top of the drink, or placed in an inverted half-lime shell and set aflame. If you serve it the former way, make sure your drinkers extinguish the flame and let it cool before drinking.

Ingredients
- 2 parts Light rum or Spiced rum or Aged rum
- ½ part Brandy or Cognac or Pisco
- 2 parts Orange juice
- ¾ part Lemon juice
- ½ part Orgeat
- ½ part Overproof light rum or Overproof aged rum
Instructions
Shake everything but the overproof rum with ice. Strain into an ice-filled glass and float the overproof rum on top, or serve it in a lime shell and light with a match.
