White Wedding

The White Wedding from Alessio Padricelli at Bó Drake in London is a beautiful marriage of soju and elderflower, witnessed by citrus and egg white. The texture is wonderful, and the flavor is rounded and pleasant.

Ingredients
- 1 part Soju
- ½ part Triple sec
- 1 part Elderflower syrup
- 1 part Orange juice
- ½ part Lime juice
- ½ part Egg white or Aquafaba
- 1 dash Aromatic bitters or Creole bitters or Orange bitters
Instructions
Shake all ingredients first without ice, and then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail glass, and decorate the egg white foam with a dash of aromatic bitters.
