Biscotti Spritz

The Biscotti Spritz really does taste like the treat it’s named for, and is surprisingly light and drinkable considering that it’s built on two very sweet liqueurs. It’s the creation of master mixologist Simon Difford, for Jamie Oliver’s now-closed Italian Bar chain.

Difford has created a number of other pastry-based cocktails, all with the brilliant technique of using a bit of much-maligned butterscotch liqueur for the buttery flavor it brings – while also keeping the sweetness in check with sparkling wine and sparkling water.

It’s a brilliant touch, and the effect is heightened by serving the drink with a piece of your favorite biscotti.
