Bitter French

This simple sparkling sour may very well be “the best beginner Campari drink in history” (as legendary barman Phil Ward puts it). Campari and other bitter orange apéritifs can be difficult for a newcomer to appreciate, but the Bitter French’s small measure and sweet-sour flavors make it go down a treat.

Ingredients
- 1 part Gin
- ¼ part Bitter orange apéritif
- ½ part Lemon juice
- ½ part Simple syrup
- 4 part Sparkling white wine or Sparkling rosé wine
- 1 piece Grapefruit peel
Instructions
Shake all ingredients (except the sparkling wine and the grapefruit peel) with ice. Strain into a flute glass. Top with the sparkling wine. Express the grapefruit peel over the drink, discard it, and serve.
