The Bliss, by Karri Kiyuna at Wildhawk in San Francisco, would be the first drink we’d turn to if we were trying to seduce someone into falling in love with blanc vermouth. It takes all of the beautiful, flowery scents and flavors of blanc vermouth and punches them up with a funky rum and potent vanilla syrup.

Kiyuna calls for Banks 5 Island rum, a white rum blended from some 20 rums from all over the Caribbean. It has an intriguing, funky flavor that works well here to tame the sweet elements of the Bliss. If you don’t have that rum, you could use a blanc rhum agricole or any white rum that you already enjoy.

Shake all ingredients with ice and strain into a chilled cocktail or coupe glass. Squeeze a lemon twist over the drink and either use it for garnish, or discard and garnish with a fancy dehydrated blood orange wheel like Kiyuna does.
