Commodore Perry

Japan’s long period of isolation from the rest of the world, called Sakoku, went on for over 200 years until American ships led by Commodore Matthew Perry, forced Japan to sign an agreement opening the country up to trade with the rest of the world.

Commodore Perry is a fitting namesake for this cocktail from the folks at PDT; its cognac-orgeat base harkens to a classic cocktail called the Japanese, while the addition of pineapple juice and sparkling wine (PDT calls for Champagne) takes that old drink to new horizons.

Shake all but champagne with ice and strain into coupe glass. Top with champagne. Stir gently to break up any overly-large bubbles.
