The Dye House is a showpiece cocktail from the Barr Hill Gin company, designed by their beverage director Sam Nelis to show off their own honey-forward gin. It’s a riff on the classic Clover Club, with nutty dry sherry cutting some of the gin, and blueberry syrup taking the place of the raspberry in the original. It’s a delicious reinvention that suits just about any gin you can throw at it, although it certainly feels most suited to sweeter, less-juniper-forward types.

Dry-shake all ingredients first without ice, then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass. Garnish with fresh blueberries on a skewer.
