The Emerald is a Manhattan variation with a softer, smoother character thanks to Irish whiskey, which takes the place of the usual rye or bourbon. Since the whiskey flavor is a little less pronounced, the vermouth is more forward – be sure to use good, fresh vermouth here.
- 2 parts Irish whiskey
- 1 part Sweet vermouth
- 2 dashes Orange bitters
- 1 dash Aromatic bitters
Stir all ingredients with ice. Strain into a chilled cocktail or coupe glass. Express an orange peel over the drink, and drop in as a garnish.
