Vanilla syrup is an ingredient we love to see liberated from the confines of dessert cocktails. In Thomas Waugh’s Golden Beautiful, a tiki-esque sour recipe, it absolutely soars.
Set against passion fruit syrup and tangy lime, bitter Campari (or any bitter citrus aperitif you like) and rich aged tequila, lightened with a touch of sparkling water, vanilla reclaims its wild jungle roots for a drink that has never, ever failed to impress anyone we’ve served it to.
Shake everything (except the sparkling water) with ice. Strain into a short glass over ice (preferably one large cube or sphere) and top with the sparkling water. Garnish with grated lime zest.
