Green Eyes, from Andrew Volk at Maine’s Portland Hunt & Alpine, is a riff on the classic Last Word, with more gin and the original’s maraschino swapped for simple syrup and egg whites. It offers a rich, herby flavor balanced with the lovely tartness of lime.
Dry-shake all ingredients first without ice, then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass. Garnish with a lime wheel and a cherry.
