Irish whiskey tends to get short shrift in this modern cocktail era, so we were overjoyed to find the Irish Sling in the archives of the Spirits column at The Washington Post.
Blanc vermouth lifts the Irish whiskey and makes it sing. Remember that blanc (or bianco) vermouth is different from dry vermouth, the former being sweeter and more floral.
Shake everything (except the sparkling water) with ice and strain into an ice-filled tall glass. Top with sparkling water and garnish with a sprig of mint and/or a wheel of lemon.
