Morning Glory sour cocktail with gin, lemon, yuzu syrup, egg white, and a pinch of salt

Morning Glory

This recipe started life as the “Yuzu Breakfast Martini” on the site for Monin, a syrup company. There’s already a kajillion “Breakfast Martini” cocktails, and it’s hardly even a martini. We’ve taken the liberty of renaming it, and took the inspiration from this haiku by Basho:

I am one

Who eats his breakfast

Gazing at morning glories

asagao ni / ware wa meshi kû / otoko kana

We tweaked the recipe to more closely match a traditional gin sour proportion and the result is just right: not too sweet, not too tart, pillowy-soft, and fragrant with the scent of yuzu and lemon.

Dry-shake all ingredients first without ice, then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass.
