The Praying Mantis, from Sean D. Enright at Spork in Pittsburgh, is a welcome upgrade to the classic Grasshopper. Menthol-forward Fernet Branca Menta (Fernet Branca works as well) and rice-based horchata liqueur offer a sophisticated twist on the simpler flavors of the original.
Green crème de menthe is prettiest here, combining with the creamy horchata liqueur (or plain horchata) to create a pretty vintage mint color.
Shake all ingredients with ice and strain into a chilled cocktail or coupe glass.
