A classic Brazilian cocktail (the name means “cock’s tail”) that might trace its roots to an old promotional campaign for Cynar, or perhaps the opening of a vermouth factory in São Paulo in the 50s. Nobody seems to know for sure, but the drink is nevertheless a national treasure, with its adherents harboring strong opinions regarding every detail, from the type of cachaça to the brand of vermouth to the proportions – even whether it ought to have a lemon, lime, or orange twist.
We’ve seen recipes that call for equal proportions or 2:1:1, but the most popular seems to be 4:1:1, which is our preference as well – it’s still plenty sweet enough, while allowing each ingredient to shine. Experiment and see how you like it!
