Sacrifice to the Gods

Sacrifice to the Gods is the invention of bartender Harry Jamison, at a.kitchen+bar in Philadelphia. It starts out like an iced coffee, and gradually becomes warmer and more herbal as the ginger, amaro, and overproof rum assert themselves. Don’t skimp on the garnish! The aromatic mint and orange twist are a major component of the flavor experience.

Jamison calls for Plantation OFTD as the overproof aged rum, and Averna as the amaro. Averna is well-suited to this and other coffee-centric cocktails, but feel free to experiment with other amari; kola flavors in particular would do well here.

Add the tonic water to a tall glass. Shake the remaining ingredients with ice and strain over the tonic water. Top with ice, and garnish with a big sprig of mint (slap it!) and an orange twist. Serve with a straw.
