Sitting Pretty, by Demi Natola at Miss Bessie’s in Nashville, is something of a three-way lovechild, the offspring of the Mojito, the Paloma, and a Cuban cocktail called a Saoco. It takes the most refreshing component of each – mint, grapefruit soda, and coconut water, respectively – and unites them with the power of their shared ingredients: rum, simple syrup, and lime. It’s a brilliant concept, and nearly as easy to mix up as it is to gulp down on a hot day.

Add the mint and simple syrup to your shaker. Muddle gently: enough to bruise the mint, not tear it to bits. Top with rum, coconut water, and lime. Add ice and shake. Add the grapefruit soda to an ice-filled tall glass, then strain the shaker into the glass. Stir gently to combine and garnish with a wheel, wedge, or twist of lime.
