Crème de menthe might seem like an odd pairing for pineapple and lime, but just a touch of it makes for out-of-this-world refreshment. Case in point: the Spaceface from Julia McKinkey at Chicago’s Young American.

It’s a bright, crisp drink just perfect for a hot day. The pineapple is faint, but lovely, meeting the vegetal notes of tequila in a union of freshness. The star here is really the garnish; the drink should offer a noseful of fresh mint from the giant bouquet tucked into the glass.

Begin by muddling the honey with lime wedge in the bottom of a shaker until the juice is released. Add the mint and lightly muddle again, just enough to release the oils without tearing the leaves. Add the remaining ingredients and ice and shake well. Strain into an ice-filled short glass and garnish with a huge bouquet of fresh mint.
