This & That is an inspired twist on the Penicillin cocktail, from New Orleans bartender Beth Willow. Peach is a natural partner to spicy ginger and smoky Scotch.
The Scotch you use shouldn’t be too big and peaty – a blended Scotch is perfect, as is a Japanese whisky.

Ingredients
- 2 parts Scotch or Japanese whisky
- ½ part Peach liqueur
- ½ part Lemon juice
- ½ part Ginger syrup
Instructions
Shake all ingredients with ice and strain into a short ice-filled glass.
