The Jet Pilot is a classic mid-century tiki cocktail, born at the Beverly Hills Luau Restaurant in 1958. It’s a riff on the earlier Test Pilot cocktail, amped up with overproof Demerara rum, more juice, and cinnamon syrup.
- 1 part Black rum or Dark rum or Demerara rum
- ¾ part Overproof aged rum or Overproof light rum
- ¾ part Aged rum
- 1 dash Anise liqueur or Absinthe
- ½ part Lime juice
- ½ part Grapefruit juice
- ½ part Cinnamon syrup
- ½ part Falernum syrup or Falernum liqueur
- 1 dash Aromatic bitters
Shake all ingredients with ice and strain into a tall glass filled with crushed or pebble ice. Garnish with a brandied cherry.
