Le Sime

Le Sime is a cocktail that dates back to at least 1934, when it was published in World Drinks and How to Mix Them by William Boothby. It has a character reminiscent of a Blood & Sand, despite not containing scotch; the dominant impression is of cherry and orange, made buoyant and fluffy by egg white.

Ingredients
- ½ part Aged rum
- ½ part Cherry brandy
- ½ part Orange juice
- ½ part Egg white or Aquafaba
- 1 tsp Simple syrup
Instructions
Dry-shake all ingredients first without ice, then again with ice added. Double-strain through a fine mesh strainer into a chilled cocktail or coupe glass.
