Pisco Sour

This drink goes at least as far back as the early twentieth century, when it was detailed in a book with the charmingly old-fashioned title of The South American Gentleman’s Companion.

Ingredients
- 2 parts Pisco
- 1 part Lemon juice
- ½ part Simple syrup
- ¼ part Egg white or Aquafaba
- 1 dash Aromatic bitters
Instructions
Shake everything but the bitters with ice. Strain into a chilled cocktail or coupé glass or champagne flute. Garnish the foam with a few drops of bitters.
