Rattlesnake

The original 1930s version of The Savoy Cocktail Book said this drink “will either cure a rattlesnake bite, or kill rattlesnakes, or make you see them.” ‘Nuff said.
The original recipe needed a little bit of tinkering to appeal to modern tastes. We love the version from Will Elliott at Maison Premiere, which calls for more egg white (or aquafaba) and lemon, and subs in brown demerara sugar for added complexity.

Ingredients
- 1½ parts Rye whiskey or Bourbon or Blended whiskey
- ¼ part Absinthe or Anise liqueur
- ¾ part Lemon juice
- ¾ part Egg white or Aquafaba
- ½ part Brown sugar syrup or Simple syrup
Instructions
Shake a bit without ice (that’s called a “dry shake”) to incorporate the egg white, then add ice and shake again. Strain into chilled cocktail glasses.
