Tall as a Tree and Twice as Shady

Blended Scotch whisky is an odd choice for a tiki drink, but master mixologist Paul McGee makes it work perfectly in Tall as a Tree and Twice as Shady, served at his bar Three Dots and a Dash in Chicago. It’s supported by the equally-strange flavors of Batavia arrack, an Indonesian pot still rum that has some similarities to Jamaican rum, but a character all its own thanks to the red rice used in its fermentation. Orgeat, lemon, and pineapple form a familiar base that help make this unusual pairing a genuinely delicious summertime sipper.

Shake all ingredients with crushed or pebble ice (or flash-blend for a few seconds) and strain into an tiki mug or tall glass. Top with more ice and garnish with citrus, cherries, flowers, or any other tropical finery you’ve got.
