Kiwi-Sea

The Kiwi-Sea is a brilliant concoction from Kurtis Bosely, a cocktail consultant and brand ambassador for Moët Hennessy. For us northern hemispherians, kiwifruit are a summer treat – but Bosely is based in New South Wales, Australia, where kiwi are an autumn crop. The Kiwi-Sea reflects that Oceanic seasonality, offering a comfortable palette of stone fruit and warm agave, set against rum and lemon, with just a hint of creamy tartness from the kiwi.
It may be heretical, but we think the Kiwi-Sea is quite nice with a light spiced rum, so long as the spice is mild and doesn’t dominate.

Ingredients
- 1 whole Kiwifruit
- ¾ part Light rum or Spiced rum
- ¼ part Apricot liqueur
- ¼ part Lemon juice
- ¼ part Agave nectar or Simple syrup or Brown sugar syrup or Lemon syrup
Instructions
Peel and quarter the kiwi, and muddle it in a shaker. Add the remaining ingredients and shake vigorously. Double-strain into an ice-filled short glass. Garnish with a half-slice each of lemon and kiwi.
