Agave syrup

Agave “nectar”, like tequila, is made from the sweet, starchy core of the agave plant (so it’s not really a nectar – just a syrup). It’s closest to honey in flavor, with a light smokiness. We love it in tequila cocktails, of course, but we’ll sub it into nearly any drink that could benefit from a touch of vegetal smoke.
