Spyglass

The Spyglass, from Meaghan Dorman at Raines Law Room in New York City, is the essence of a cherry cordial candy, made light and effervescent with the addition of light rum, fresh lemon juice, and fizzy sparkling white wine (drier is better here).

Ingredients
- 2 whole Cherry
- 1 part Aged rum
- ½ part Lemon juice
- ½ part Orgeat
- 1 dash Mole bitters
- 2½ parts Sparkling white wine
Instructions
Muddle the cherries in a cocktail shaker. Add the remaining ingredients (except the sparkling white wine) and ice. Shake vigorously, and then double-strain into a chilled coupe glass. Top with the sparkling white white and garnish with a fresh or brandied cherry.
