We first heard of the Yellow Pepper #2 from comedian Eric Andre, who turns out to be a fan of craft cocktails. This one from mixologist Gabriella Mlynarczyk is an excellent example of her creative use of fresh ingredients, as demonstrated in her book Clean + Dirty Drinking.
It’s got “yellow” in the name, so naturally it really should be a yellow sweet pepper (AKA bell pepper or capsicum). You can juice the peppers by blending them up and straining out the solids, or just crushing chunks of pepper in a measuring glass with a heavy muddler and pouring out the juice.
You can use either mezcal or tequila, or a mix of both, depending on how smoky you’d like it. You can use any spicy bitters you’d like – Mlynarczyk’s recipe calls for Scrappy’s Firewater Bitters, but it’s another nice opportunity to bring in some smoke, if you have smoked chile bitters, or you could skip the spice altogether and bring some extra greenery with some celery or fennel bitters.
