Brown sugar is granulated sugar, with a little bit of dark molasses left in during production. The color – light or dark – is determined by just how much of that molasses is left intact.

In a pinch, you can make your own brown sugar by mixing white sugar and molasses. Start with about one teaspoon of molasses to one tablespoon of white sugar and add in more molasses as needed to achieve the desired effect.
