Sake is a rich, piquant “wine” made from rice. We say wine, but the process of fermenting the rice makes it more like beer to our minds. Sake comes in two main groups: Futsū-shu (table sake – avoid it) and Tokutei meishō-shu (everything better than Futsū-shu). In the latter quality there are even more special designations but rather than go into each one here, we’ll share our rule of thumb: if you like drinking it straight, you’ll probably like it in a cocktail.
