Cinnamon syrup is an essential component of classical tiki drinks, and it’s nice to have on hand for hot toddies. It’s great on pancakes, too!
You can buy it ready-made, but it’s so easy to make your own and tweak it to your preferences. Start with a half-and-half mix of white and brown sugar, and add an equal amount of water. Toss in a few cinnamon sticks and a healthy pinch of ground cinnamon.
Simmer the mixture for about 15 minutes, then remove from heat and discard the cinnamon sticks. You can add a little vanilla extract now, if you like. Let it cool, and pour it into a jar or bottle. You can keep it in your fridge for several weeks.
