Bitter citrus apéritif

Don’t be fooled by the rosy citrus hue; this is an unparalleled bitter flavor. Although they’re usually sold in full-size bottles, bitter citrus apéritif are often used in the same way you’d use bitters – a small amount, to balance out sweet flavors in a drink.
Campari is de rigueur in drinks that call for this ingredient, although nearly as many call for Aperol, a much sweeter (though still bitter) brand.
