Apple brandies can vary greatly in terms of flavor, color, and sweetness. Make sure to tweak your drink to take advantage of the type you have on hand. Be sure you have a brandy – dry, faintly sweet – and not a liqueur, which is much sweeter.
Calvados is a special type of dry apple brandy, made in France’s Lower Normandy region. It’s made in the eau de vie process, and then aged in oak casks for at least two years.
We’ll make a note when a recipe specifically calls for calvados or applejack, or any other specific type of apple brandy.
