Okay, we admit it – we think egg whites are disgusting. The texture, the appearance – ugh, it’s almost too much to think about – and yet, we still tried some classic recipes with the egg whites they called for. The result? Our drinks were astounding – incredible mouth-feel, and an inexplicable lightness we were unable to replicate in any recipe that did not include egg whites. It’s worth it, so we’ve gotten over our egg white phobia, for the most part – but we still don’t let our friends see it when we add it to the shaker. Ignorance may well be bliss, for them.
Cocktails with egg yolks or whole eggs are a little more rare, but worth a try just to experience the wonderful body and velvety texture. Drinks with egg yolks often have “golden” in the name, while whole-egg drinks are often called “flips” – an antique class of drinks that includes eggnog.
If you have reason to be worried about the (slim!) possibility of picking up salmonella from your eggs, choose pasteurized eggs and wash them thoroughly before you use them to reduce the risk.
